Natural Colorants or Natural Edible Colorants mainly refer to the pigments extracted from plant and animal tissues, which are mostly plant pigments, including microorganisms pigments, animal pigments, and inorganic pigments. Most of them are from plant tissues, especially that of fruit and vegetables. They have high safety and some have nutritious functions(like carotene).

Features of Natural Colorants:

Better able to imitate natural colors with more natural color shade; high cost, short shelf life;
Easily effected by metal ions, water quality, pH, oxidation, light and temperature; low dispersity;
Low coloring property and intermiscibility among colorants.
